Before they approve your invitation, they are stored as draft users. You can customize their associated roles and permissions how much you like, even after the invites are sent.
New users will see a prefilled signup form based on the name and email you enter when you create the draft users, but they can alter the info if they want. The same principle applies to email addresses. Once the user has joined, they have complete control over their profile info, including name, email, and profile image.
